This is a virtual tour of enjoying tori paitan ramen at “Oreno Ramen” in Jongno, Seoul. Hope you enjoy watching!

This ramen shop has been listed in the Michelin Guide’s Bib Gourmand for seven consecutive years.
Overall, the flavors feel cohesive, with everything leaning toward a sense of smoothness.

The chicken broth is extremely rich — so concentrated that it carries a distinct, bone-forward aroma.
A small amount of what appears to be caramelized onion is placed on top, and it pairs well with the depth of the chicken soup.

The egg is thoroughly marinated, with the soy sauce flavor deeply absorbed, giving the yolk a rich taste.
Since it’s soft-boiled, it doesn’t spring back when pressed, instead yielding easily under chopsticks.
The chicken breast is sous-vide cooked, and its tenderness stands out.
The fine foam on the chicken broth seems to tie all these soft textures together.

Because the thick soup clings well to the noodles, the broth’s flavor comes through very strongly.
This makes the ramen satisfying, but as you continue eating, it may start to feel a bit heavy.
When that happens, pairing it with the fresh green onions on top, along with the pickled chili and radish served on the side, helps balance the richness.

The green tea on the side is a good pairing for this meal.
