The rice noodles have a tender, smooth texture rather than a chewy one, which helps balance the crispness of the fried roll.

The dipping sauce has a light fermented note from fish sauce and a touch of acidity from vinegar.
Since the noodles tend to clump together, you’ll end up using quite a bit of sauce to loosen them.
The flavor doesn’t get too salty, so if you don’t mind the distinct aroma of fish sauce, it’s perfectly fine to add more.
If that scent feels too strong, try mixing in the garlic and chili on the side — both are quite sharp, so it’s best to adjust to taste.
The pickled radish served alongside helps refresh the palate, making each bite feel balanced.

Though the overall flavor profile leans bold and aromatic, the vegetables themselves are mild and easy on the palate, keeping the dish from feeling heavy.

Since it was autumn when I visited, they also served a cup of warm tea on the side — a thoughtful finish to the meal.
