Pork Sauce is a basic meat sauce cooked with ground pork shallot and soy sauce. It is used in all sort of comfort food in Taiwan. You can eat it with rice and noodle. You can put on on top of cooked vegetables. The savory sauce goes with everything.
Red Pork Stew is a variation of the pork stew肉羹. The pork stew is a thick soup cooked with pork broth and sliver bamboo shoots. The protein is pork paste ball or fish paste ball. The stew is thicken with starch. Flavor is enhanced with a dollop of Satay sauce added before serving. In this variation the pork paste ball is replaced with marinated pork. It is aslo a common stable of Taiwan comfort food.
